Goat Cheese Breakfast Toast



It may seem like such a simple pleasure, but this meal packs a punch with flavor, filling and simplicity! It’s great for breakfast but you truly can enjoy it at any time of the day.  



Sourdough bread (how ever many of your choosing)

2 tablespoons unsalted butter

Eggs (how ever many of your choosing)

Salt, pepper, & oregano to taste

1 tablespoon olive oil

4 ounces softened goat cheese

2 cups quartered cherry tomatoes



  1. Cut your sourdough bread into thick slices.
  2. Toast your sourdough bread.
  3. While that is toasting, rinse and quarter the cherry tomatoes.
  4. Add olive oil, salt, pepper, and oregano to dress your tomatoes (optional).
  5. Mix and set aside.
  6. Melt butter in a large nonstick skillet over medium heat. Crack eggs into the skillet and cook to your desired doneness.
  7. Top eggs with salt and pepper to taste.
  8. Spread a layer of goat cheese over each piece of toast. Top with an egg and add your tomatoes.
  9. Serve and enjoy!
