Goat Cheese Mac & Cheese
Creamy, comforting, and full of rich goat cheese flavor—this Goat Cheese Mac & Cheese is the ultimate twist on a classic. With a blend of goat mozzarella, goat cheddar, and tangy soft goat cheese, every bite is velvety, savory, and deeply satisfying. Ingredients
- 8 oz goat mozzarella, shredded
- 8 oz goat cheddar, shredded
- 12 oz elbow pasta
- 2 cups goat milk
- 2 tbsp all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 2 tbsp butter
- 4 oz soft goat cheese
- ¼ cup breadcrumbs
- 1 tbsp fresh chives, chopped
Instructions
1. Prep the Cheese
Shred the goat cheddar and mozzarella. Divide into two portions—half will melt into the sauce, and half will be used as the topping.
2. Preheat the Oven
Heat your oven to 400°F and lightly grease a 9x13" baking pan.
3. Cook the Pasta
Boil the pasta in about 4 cups of water until al dente. Drain well and set aside.
4. Make the Sauce Base
In a bowl, whisk together the goat milk, flour, salt, pepper, and garlic powder.
5. Create the Cheese Sauce
In a deep pan, melt the butter. Pour in the milk mixture and add the soft goat cheese. Whisk until the sauce thickens, then stir in half of the shredded cheddar and mozzarella.
6. Combine
Add the cooked pasta to the sauce and toss until fully coated. Transfer the mixture into your prepared baking pan.
7. Add the Topping
Sprinkle the remaining shredded cheeses over the top, followed by the breadcrumbs.
8. Bake
Bake for 20 minutes, or until the breadcrumbs are golden brown and the cheese is bubbly.
9. Serve
Serve warm and finish with a sprinkle of fresh chives.
