Lemon Pasta Salad with Goat Butter
A quick and delicious pasta salad, infused with smooth and creamy goat butter - the combination of lemon and the goat butter makes this salad mouth-watering good! It's so easy to make and great as a side or to bring along to a dinner party.
Ingredients
16-ounce package of farfalle pasta
2 medium-sized zucchinis
1 pound of fresh snap peas
1 bunch of chopped parsley
4-6 tablespoons of goat butter
2 lemons, juiced
1 lemon, for garnish
Olive oil, to taste
Salt, black pepper, and garlic powder to taste
Directions
In a large pot with boiling water, add salt and cook pasta until al dente.
Wash your fresh snap peas, zucchinis, and parsley.
Start on your prep. Juice two lemons in a small bowl and set aside. Chop your snap peas, zucchini, and parsley.
In a sauce pan on medium heat add a drizzle of olive oil, snap peas, and zucchini. Let your veggies cook down, then add a stick of goat butter and lemon juice. Season to taste with salt, pepper, and garlic powder. Cook until butter is melted, and veggies are finished.
Drain your pasta and add it into a large bowl. Add your veggies with lemon butter and cut parsley on top if the pasta.
Mix ingredients until well combined.
Serve and enjoy!
