Roasted Dates with Goat Cheese
A simple, light, and delicious snack perfect and easy to make for a quick bite!
Ingredients:
1 package pitted dates
1 log goat cheese
1/3 cup finely chopped walnuts
2 teaspoon minced fresh rosemary
1 teaspoon orange zest
2 teaspoon fresh orange juice
¼ teaspoon ground cinnamon
Salt to taste
3 tablespoon extra-virgin olive oil
Optional: drizzle of hot honey
Instructions:
- Preheat oven to 375℉
- Using a sharp knife, slice the dates open lengthwise (should look like a hot dog roll).
- Open the dates and fill each one with 1-2 teaspoons of goat cheese.
- Arrange dates into a 9x9 inch baking sheet or dish. Set aside.
- In a small bowl, combine walnuts, rosemary, orange zest and juice, cinnamon, salt, and olive oil; mix well.
- Spoon walnut mixture over goat cheese stuffed dates and roast for 15 minutes.
- Drizzle with hot honey if desired.
- Serve and enjoy!
