Vegetable Chili with Goat Cheese

Creating satisfying flavors when cooking vegetarian dishes requires finding balanced harmony between the flavors that hit our tongues. We have the easiest Veggie Lovers Chili with an amazing twist - goat cheese! Packed with delicious carrots, squash, tomatoes, chickpeas, beans and so much more; this dish is sure to become a staple you’ll have all year!



2 tablespoons cumin seeds
2 tablespoons oregano
3 tablespoons garlic
4 ½ teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
½ cup olive oil
2 large onions
1 tomato
1 large can of crushed tomatoes
4 jalapeno pepper
3 carrots
2 cans of black beans
1 can chickpeas
1 bag of peas
Butternut squash
1 large red bell peppers
1 large green bell pepper
6 ounces goat cheese



  1. Dice your onions and mince your garlic, add to a large pot on medium-low heat.
  2. Chop up your green bell pepper, red bell pepper, carrots, tomato, and jalapeno. Add to large pot and stir ingredients together.
  3. Rinse your chickpeas and black beans.
  4. Add chickpeas, black beans, butternut squash, and peas to pot. Stir.
  5. Add your can of crushed tomatoes and mix everything together.
  6. Add salt, garlic powder, paprika, cumin, oregano, cayenne pepper, and rosemary. Stir.
  7. Cover pot with lid and leave on low heat for an hour.
  8. Place chili in a bowl and sprinkle goat cheese on top. Add chips on the side if desired.
  9. Serve and enjoy!
