Ingredients
- 2 large sweet potatoes, peeled and cut into ¾-inch cubes
- 2 ½ tbsp olive oil or melted butter
- 2 ½ tbsp pure maple syrup
- ½ tsp salt
- ¼ tsp cinnamon (optional)
- ⅓ cup chopped walnuts
- 2–3 oz goat cheese, crumbled (for finishing)
Instructions
