Baked Apples with Goat Cheese & Cinnamon
Warm, tender apples filled with creamy goat cheese and a hint of cinnamon then topped to perfection. A simple snack to enjoy with the whole family.

Ingredients:
- 4 medium apples (such as Honeycrisp or Fuji)
- 4 oz goat cheese, softened
- 2 tbsp cream cheese, softened
- 2 tbsp honey, divided (plus more for drizzling)
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon (plus more for sprinkling)
- 1/4 cup chopped pecans or walnuts (optional)
- Pinch of salt
Instructions:
- Preheat oven to 375°F (190°C).
- Core the apples, leaving the bottom intact to create a well. Place them in a baking dish.
- In a bowl mix together goat cheese, cream cheese, 1 tbsp honey, vanilla extract, cinnamon, and a pinch of salt until smooth.
- Spoon the cheese mixture evenly into the center of each apple.
- Drizzle the remaining 1 tbsp honey over the apples and sprinkle with cinnamon and chopped nuts.
- Add 1/4 cup of water to the bottom of the baking dish.
- Bake for 25-30 minutes, or until apples are tender but not mushy.
- Drizzle with more honey before serving, if desired. Serve warm.
