Goat Cheese & Cucumber Bites
These crisp & creamy no-cook bites come together in just minutes and make an effortless summertime appetizer, poolside snack, or light bite when you want something simple but elevated.

Ingredients:
- 1–2 cucumbers
- 1/2 cup goat cheese (softened)
- 1–2 tbsp cream cheese or Greek yogurt
- 1–2 tbsp fresh dill, chives, and basil (finely chopped)
- 1 tsp lemon juice
- Salt & pepper to taste
- 1–2 tbsp honey
Instructions:
- Slice cucumbers into thick rounds. Place them neatly on a plate and set aside.
- In a bowl, mix to combine the goat cheese with cream cheese/yogurt, herbs, and lemon juice.
- Spoon or pipe the mixture onto each cucumber slice.
- Finish with a drizzle of honey and salt and pepper to taste.
