Goat Cheese Omelet

Ingredients

  • 6 large eggs
  • 1 tbsp olive oil
  • ½ small onion, diced
  • ½ bell pepper, diced
  • 2–3 tbsp goat cheese, crumbled
  • Salt & pepper to taste

Instructions

  1.  In a nonstick skillet over medium heat, add the olive oil. Sauté the onions and bell peppers until soft, about 5–7 minutes. Remove from the skillet and set aside.
  2.  In a bowl, whisk together the eggs, salt, and pepper until the mixture becomes light and slightly frothy.
  3. Pour the egg mixture into the same skillet over medium-low heat. Let the eggs cook undisturbed until the edges begin to set.
  4. Sprinkle the crumbled goat cheese over one half of the omelet.
  5. Carefully fold the omelet in half. Cook for another 1–2 minutes, until the cheese softens and the center is just set.
  6. Slide the omelet onto a plate and serve warm.
