Goat Cheese Omelet

Ingredients
- 6 large eggs
- 1 tbsp olive oil
- ½ small onion, diced
- ½ bell pepper, diced
- 2–3 tbsp goat cheese, crumbled
- Salt & pepper to taste
Instructions
- In a nonstick skillet over medium heat, add the olive oil. Sauté the onions and bell peppers until soft, about 5–7 minutes. Remove from the skillet and set aside.
- In a bowl, whisk together the eggs, salt, and pepper until the mixture becomes light and slightly frothy.
- Pour the egg mixture into the same skillet over medium-low heat. Let the eggs cook undisturbed until the edges begin to set.
- Sprinkle the crumbled goat cheese over one half of the omelet.
- Carefully fold the omelet in half. Cook for another 1–2 minutes, until the cheese softens and the center is just set.
- Slide the omelet onto a plate and serve warm.
