Strawberry & Goat Cheese Pastry Puffs

Perfect for summer entertaining, brunch spreads, or a simple afternoon indulgence, these pastries come together with just a handful of ingredients and look as good as they taste.

Ingredients: 

  • 1 sheet of frozen puff pastry, thawed
  • 4 oz goat cheese, softened
  • ¼ cup strawberry jam or preserves
  • Optional: fresh thyme leaves or basil for garnish

Instructions: 

  1. Preheat the oven to 400°F. 
  2. Lightly flour countertop or flat surface and unroll puff pastry on top.
  3. Cut puff pastry into 2x2 inch squares and place into the cups of a miniature muffin pan.
  4. Place about 1 teaspoon of goat cheese in the center and top with 1 teaspoon of strawberry jam.
  5. Bake for 14-18 minutes, or until pastry is golden brown. Allow to cool slightly for 1 minute then remove from pan.
  6. Garnish with fresh thyme or basil if desired. Serve warm or at room temperature.
